A leap forward…

Considered by early cultures to be the “drink of the gods,” wine has a rich history spanning millennia of discovery, refinement, and innovation. Thousands of substances contribute to its aroma, the study of which continues to this day by researchers around the world. Wine aroma is undoubtedly complex, and its sensory perception by the human nose can vary tremendously with personal preferences, expectations, and even mood.

Our vision for project PINOT is to develop an aroma detection system for members of the wine industry to not only more reliably assess wine aroma, but also objectively evaluate its quality and authenticity. Aided by artificial intelligence, the PINOT system learns from experience to draw conclusions regarding grape variety, origin, vintage, viticultural and winemaking practices, as well as terroir, the unique combination of environmental conditions that give each wine its sense of place.

With PINOT, we hope to furnish a more complete understanding of how these factors contribute to wine aroma. This should allow producers and retailers to make more informed decisions, and consequently ensure consumers enjoy only the very best that the wine world has to offer.
